FUDGY SNICKERS CHEESECAKE - WITH COOKIE CRUST
MAKES 8 SERVINGS.
1 tbs each flour and vanilla
2 tbs each hot fudge topping and peanuts
28 chocolate wafer cookies
4 tbs butter, melted
Three 8 oz pkgs cream cheese
1 1/4 cups sugar
1 cup peanut butter
4 eggs
2 cups cream
1/4 cup caramel topping
Heat oven to 3OO degrees. Coat 9x3" springform pan with cooking spray. In processor, process cookies until ground. Transfer to bowl, stir in butter. Press into bottom of pan. Bake crust 1O min. Beat cream cheese and 1 cup sugar until smooth. Add peanut butter, beat until smooth. Beat in eggs. Beat in 1/2 cup cream, flour, and 2 tsp vanilla. Pour into pan. Bake 1 hour. Turn off oven. Let cheesecake stand in oven with door closed 1 hour. Loosen cheesecake. Cool on a rack. Refrigerate 8 hours. Remove side of pan. *In bowl, beat remaining cream, 1/4 cup sugar, and 1 tsp vanilla until stiff peaks form. Transfer to pastry bag fitted with star tip, pipe over top of cheesecake. Stir 1 tsp water into fudge topping. Drizzle fudge and caramel toppings over whipped cream. Sprinkle with peanuts. SERVE & ENJOY...
