SPICY TOMATO SPAGHETTI - WITH FRESH TUNA
MAKES 4 SERVINGS.
1/4 tsp each dried oregano and red pepper flakes
12 oz tuna steak, cut into chunks
2 tbs olive oil
1/2 onion, cut into chunks
1 bulb fennel, cored, chopped
3 stalks celery, chopped
3 tbs drained capers
1/3 cup vegetable broth
15 oz can cherry tomatoes
1O oz spaghetti
Bring a pot of salted water to a boil. Heat 1 tbs oil in a skillet. Season tuna, add to skillet, cook until browned. Remove to a plate. Add remaining oil to skillet. Add onion, fennel, and celery, season, cook until vegetables soften. Add capers, oregano, and pepper flakes, cook 1 min. Pour in broth, simmer until reduced by half. Add tomatoes and 1/2 cup boiling water, cook tomatoes until sauce is thickened. *Add pasta to boiling water, cook as label directs, then drain. Return tuna to skillet. Add pasta, toss. Divide among bowls. SERVE & ENJOY...
