MAPLE SYRUP CHEESECAKE
MAPLE SYRUP CHEESECAKE - WITH COOKIE CRUST
MAKES 8 SERVINGS.
CRUST---
3 tbs unsalted butter, melted
1/2 tsp salt
1 1/2 cups crushed shortbread cookies
FILLING---
2/3 cup maple sugar
1 cup maple syrup
Four 8 oz pkgs cream cheese
3/4 cup sour cream
6 large eggs
2 tsp vanilla
MAKE CRUST---Heat oven to 325 degrees. Combine cookies, butter, and salt in a bowl. Press into bottom of a 9" springform pan. Bake 18 min. Let cool 3O min. MAKE FILLING---Beat cream cheese in a bowl 1 min. Add maple sugar, beat 2 min. Beat in sour cream. Add eggs, beat well. Beat in maple syrup and vanilla until smooth. Brush pan above crust with butter. Wrap outside of pan with foil, set in a roasting pan. Pour filling into crust. *Transfer cheesecake in roasting pan to oven, pour some boiling water into roasting pan for water bath. Bake cheesecake 1 1/2 hours. Turn off oven, leave cheesecake in oven 1 hour. Remove cheesecake from water bath, remove foil, let cool 2 hours in pan. Then refrigerate cheesecake 8 hours. SERVE with maple syrup for drizzling & ENJOY...
